I am in the process of building my first 250 fpv and I am wondering what peoples opinions are on receiver antenna positioning, the receiver that I have is a turnigy ia6 which has two thin wire antennas which I understand should be orientated at 90 degrees to each other, I have seen these mounted in a v formation on 250 type quads giving them the look of a grass hopper is this an effective mounting or is there a better configuration that can be used and what affect does the carbon fibre frame have on signal reception?

The grasshopper look ( V ) is the look you want, the multicopter will be 99.99% level ll the time it flies so that will give you the best reception.
Carbon fibre reflects RF so you want your active part of your antennas as clear as can be reasonably practicable.

Another thought I have concerns the use of 2.4 clover leaf antennas for rc receiver and transmitter, would there be any benefit to this and if so how would this affect the positioning of the two antennas on a receiver like mine?

A cloverleaf would give out and receive in a circular pattern, so at banked angles, dives etc it would not loose any dBi
That`s fine, but with a receiver with two inputs having one as a clover and one as not would be pointless as the clover would always have the better signal. The same applies with having two clovers on a diversity receiver, pointless on a mini quad that flies level 99.9% of the time.
Thanks for the explanation, this is somewhat of a learning curve for me having come from old rc cars to an ar drone to building an rc 250, I can see this configuration would benefit a fixed wing with a single receiver antenna as it would allow for far more acrobatic performance
