One thing I would say is for FPV, especially if you don't have an airspeed pitot tube (GPS is not reliable means of gauging airspeed)....

You want a good chunk of positive stability, not too much though.  You want to trim the plane for level flight at a sensible cruise speed, then you can tell if you are faster, as the plane wants to slowly lift it's nose a little, or too slow because it wants to drop it's nose.  So you can tell your speed relative to cruise based on what you have to do to the elevator.

Too neutral and you don't get this feedback and it will just start to sink, or worse stall suddenly if you go too slow.
