A 5x5 will push well but that's probably going to frazzle it. A 4.5x4.5 if they exist may do it? maybe even a 4x5 if they exist?

Steeper pitch will unusually give more thrust. Launching will be harder.

Making the prop bigger but keeping the pitch the same will get you more thrust, making the pitch bigger but keeping the prop the same size will get you more speed.

Doing both will increase both thrust and speed, but increasing either will pull more amps. It's all about finding a sweet spot and using the correct components in order to cope with the results of your changes.

Seriously, if you have built your wing in a way to handle 4S that is the way to go if you really want speed. Vertical performance and screaming around.
Mine is equipped with the eMax motor supplied in the power kit by Flyingwings. The key is to use a 'tame' prop, (5x4" twin blade standard tip DAL in my case) as the RPM is significantly higher and make sure your CoG is still correct after putting in a heavier battery.

Late to the party on this one, but just to say that I did some thrust tests with the standard Hornet motor, 3S 800mah Battery and ESC, and the best prop I found was a 6x3.  I think the one I used was the RipMax one. 

This gave a peak thrust of 428g @ 9.86A.

Currently checking out another power train (currently fitted to an X-1) but likely to make it onto a Hornet :
EMAX RS2205 2300KV motor
30A BLHELI_S ESC
6x4E Prop
Turnigy Bolt 1000maH 4S liHV

This gives a peak thrust of 1305g @ 29.38A.

Do you not find the 3" pitch a bit slow on 3S?

Mine arrived with a 5047 Bullnose, and was quite fast on 3S, but it killed the packs in about 4 minutes of hooning.
I now use 5040 non bullnose, and get around 8 or 9 minutes at 50% throttle, longer if I'm gentle, but it's not what I would call quick...

That's what I use but switch between 3 & 4S packs depending on how I want it to fly. Hooning around on 4s is fun but it is more balanced on 3S.
