To be honest I'd probably be tempted to go with the same power options everyone else does, it gets crazy flight times / distances.
Education and schoolin is good, but FPV is gooder :)

I am tempted to make it a night flyer - there's nowhere for an HD camera, and with a small stabiliser and a Runcam Owl or Night Eagle in it, it'll be ideal since it weighs nowt and its generally calm on evenings so it'll be fairly steady in the air too....

I would be interested in seeing how it's built. What I mean by that is, I have only built quads, so things like COG and working out servo throws, the sort of basics you guys take for granted. Quads are just bolt together, and solder a few wires up. I believe planes are a bit more involved with motor mount construction, chopping holes for servos (how do you decide where to cut the holes, do you glue them in or use tape?) Are there special hinges or are they part of the kit?

Planes like these are way easier than putting a quad together.  You screw on a motor, glue in some servos, stuff the rest in, check the CG and chuck it!

The servo holes are already cut and the CoG is already marked. To be honest there are a million and one tutorials on how to build a plane and I'm the last person you want to listen to for tips on a build lol. On that basis you can't go wrong because I've flown a lot of planes and most of them worked fairly well.

That's exactly what I did. It was at that moment that I discovered I cant fly a plane LOS :(

To be fair a Mini Talon isn't exactly beginner friendly, they're fast and not very forgiving at low speeds.

 Flying a plane, even one with a Flight Stabiliser, is not remotely like flying a quad. It takes a degree of skill, and the first obvious difference is, when you chuck it, it will get small very quick, you can't hover it while you become friends with it....lol.

  Im still amazed how many FPV Pilots still can't fly LOS, a dead giveaway is landing time as they invariably land using the Camera, and as any LOS Pilot knows, the visual queues LOS gives are way superior when landing in a controlled fashion.

No way - landing FPV is much easier lol. Landing LoS the aileron controls are reversed, at least until you go past yourself and then they aren't.... with FPV you can see exactly where the plane is going to go at all times.

To be honest I'm fine either way, once you can actually fly LOS then the ailerons are never "reversed".  I'd say it's easier LOS to slow the plane down to the point where it is just above a stall and make an actually decent landing.  This is why you see a lot of FPV flyers just flying the things into the ground at 30 mph and calling it a landing.  It's also one of the reasons why their planes often don't seem to last very long.
