rudders don't really work on planes like this. for a rudder to be worth including, it would have to be out back on a tail of some description. I've seen videos of people trying all sorts to attempt to introduce some kind of yaw control on a "wing" style aircraft... the conclusion is that a rudder only works (usefully) on a tail

Yep, agreed, but what I'm getting at, is that to do a smooth turn, without losing height, is partly down to good co-ordination of controls, be it only ail / elev.
Rudder helps.
But so does a decent airframe.

I agree, I'd actually go so far as to say it's mainly down to good piloting skills.
